I had the absolute pleasure of attending the fermentation class today! It was incredibly eye-opening to see how knowledge of miso and other traditional elements can be beautifully applied to everyday cooking. From appetizers and mains to desserts, I was truly amazed by the versatility of these fermented ingredients. The instructor was exceptionally patient and attentive, taking the time to answer all of my questions with great care. I highly recommend this class to anyone looking to elevate their culinary journey and experience the true magic of fermentation!

Loved the cooking class with Midori. I am gluten intolerant, not coeliac, she was able to accommodate and made sure all food was safe. We made onigiri, gyoza and katsudon, everything was delicious! Midori San is a great host and we had a lovely chat about a lot of things including Japanese cuisine and places to visit in or around Kyoto. I can definitely recommend!

This is the best class for anyone who loves cooking. It is also a new and fun class for those who don't like cooking. Also, this cafe, which hosts this tour, is very friendly and caring to everyone. It has various souvenirs made with kome rice, and it is a very nice cafe that is eco-friendly. I will try to make onigiri in the way they taught me. If you go to Tokyo, Japan, you should definitely take this class. Not only will you have fun, you can also eat your own delicious onigiri. この店最高 :)

Shun was very eager to share his love and passion for Japanese alcohol. I was particularly happy to learn local way of drinking Sake with Dashi. This is the type of experience I am looking for and he did a great job bringing us to 3 hidden places.

Shun has incredible taste in food and has a deep knowledge about sake. I was the only person in this tour and he was able to tailor the tour to my requests. I asked to try some sake and eat what the locals eat. I'm deeply humbled by his knowledge and exposed how much I didn't know about Japnese cuisine and sake. First stop was a hidden izakaya where the proprietress served a style of food called obanzai, essentially drinking food if you come from a culture that has that concept (I'm Vietnamese, it's very familiar to me). We had a couple of shots of sake and enjoyed a conversation over the snack and sent me recommendations. We continued to a sale tasting where I discovered that had been ignoring an entire classification of sake due to my own ignorance as Shun explained each sake in the flight of sake served to me. We ended off the night with miso ramen from a local favorite ramen shop. My mind was blown and stomach was happy. My only suggestion for Shun is to carry a sign that says "Shun" or "By Food Tour". We arranged a meeting point, but didn't mention how to recognize him. Other than that, I wholly recommend Shun as a tour guide. I'll gladly book him again if I have some folks with me, they need to experience what I experienced!

Our friend group did this cooking class together on our first trip to Japan and the ladies were both so sweet and helpful. Everything we learned to make was much easier than expected and the printed instructions are so easy for us to follow at home for a delicious traditional meal.
