Ginza Negura is perfectly at home in the chic streets of Tokyo’s most stylish neighborhood, Ginza. With dark wood and black marble accents, the shabu shabu and sukiyaki restaurant invites guests to step into its world of sophisticated dining.
Presenting an unequivocally grand menu of Japanese Black beef, also known as “kuroge wagyu,” Ginza Negura offers only the highest quality ingredients. Locally sourced beef from Kobe, Maezawa, Omi and Miyazaki is sliced so delicately that it can be cooked in the slightest of dips in a hot water bath before being eaten with perfectly balanced sesame or ponzu sauces.
Each course includes a selection of beef cuts to be enjoyed with shabu shabu or sukiyaki. For its shabu-shabu, the restaurant uses naturally carbonated water from Oita Prefecture, which it believes is key to tenderizing the meat. Guests can use a delicately flavored sesame sauce or the less-zesty ponzu. A word of advice? Choose between six salt varieties that are hand-chosen from around the world.
A similar dedication extends to its sukiyaki option. The sweet, enticing aroma of warishita sauce, crafted to be less sweet than most, enveloping the meat teases the senses, while distinctive pale blue-shelled Araucana chicken eggs await to be cracked, adding a rich, velvety touch to the meat.
For an elevated experience, Ginza Negura also offers a wide variety of alcoholic beverages, such as craft beers and rare sakes served in unique and handmade choko (sake cups).
