Shabuzen Kagurazaka

In Tokyo, few dishes express the Japanese feeling for simplicity and season like shabu-shabu. At Shabuzen Kagurazaka, a minute’s walk from Iidabashi subway station, that tradition is kept with quiet care. The Shabuzen name first appeared in Roppongi in 1983, and this Kagurazaka branch has welcomed guests since 2007, carrying forward a philosophy of generous, unhurried Japanese cuisine. One floor below the street, the noise of the city falls away. Staff in traditional Japanese attire lead guests to tables screened by noren curtains, semi-private booths, or private zashiki rooms with sunken horigotatsu seating, where families and colleagues can settle in at their own pace. The restaurant is entirely non-smoking, and its rooms suit occasions from business dinners to family milestones. At the heart of the menu is Japanese Black wagyu, selected by the executive chef in three cuts: lean round with a clean, gentle flavor, rib roast with well-balanced marbling, and sirloin valued for its sweetness and depth. Every setting opens with a small seasonal appetizer and a platter of Japanese-grown vegetables, and the courses pair the beef with Yamagata pork. Swished through the simmering pot, each thin slice turns tender in moments, its marbling melting into the broth. Shabu-shabu ends with kishimen noodles and mochi, while sukiyaki closes with a bowl of steamed rice. Here, wagyu is never hurried.
