Description
Good to Know
In Tokyo, Japan, Roppongi sets many of the city's trends, yet one flight below its streets the evening slows. Shabuzen Roppongi has served shabu-shabu and sukiyaki here since 1983, carrying its craft through the Showa, Heisei, and Reiwa eras.
Past the entrance, the noise of the district gives way to a composed, modern Japanese interior. Soft wood grain and warm lighting shape a space with the feel of a private residence, where secluded rooms and sunken-floor horigotatsu seating sit alongside an open hall divided by lattice partitions. Staff in Japanese dress offer a quiet form of Japanese hospitality in one of the capital's most international neighborhoods.
The kitchen works from a simple conviction: well-chosen beef should be enjoyed generously. Since its founding, Shabuzen has kept to an all-you-can-eat style, pairing Japanese Black wagyu with its own sesame sauce and ponzu. Both are made in-house without preservatives and served fresh each day, a habit that places this premium restaurant within the craft of Japanese cuisine.
Courses open with an appetizer before the beef arrives, from lean wagyu and ribeye to sirloin and Matsusaka ribeye. A thin slice passes through the simmering pot, turning pale pink before it meets the scent of sesame. Sukiyaki follows another rhythm, with scallion and onion seared first, then beef, a pour of warishita, and a dip of egg. Domestic vegetables fill out the pot, and shabu-shabu closes with mochi and kishimen noodles made with funori seaweed.
By the last bowl, the steam has thinned and the table has grown quiet. What lingers is warmth, and the ease of a meal shared without hurry.
