From the moment you step beneath the noren-curtain and into the softly lit interior, you are welcomed into a space where timber, tatami and subtle lighting evoke the warmth of an Edo-era gathering. At the heart of the experience is the hand-cut soba, fashioned each day using domestically-sourced, premium brown buckwheat flour milled on-site by stone-grinding — every nuance of weather and grain is taken into account to ensure the truest expression of flavour. The house-made dashi, marrying deeply-smoked katsuobushi and carefully balanced kaeshi, envelops each delicate noodle in an aromatic broth with comforting depth. Signature dishes include the classic mori-soba served with freshly grated wasabi, and in cooler months the duck-nabe course, featuring locally raised kamo and seasonal produce, followed by the soba in the rich duck consommé.
