This Ginza restaurant marks a new chapter for the long-established yakitori house, carrying its history forward while presenting a more composed and contemporary expression of Japanese cuisine.


Niigataya’s story began in 1947, in the immediate postwar years of Japan, when its first proprietor, Sadakichi Igarashi, traveled from Niigata to Tokyo. With the support of his brother-in-law, who operated a butcher shop in Higashi-Jujo, Igarashi borrowed a modest six-tatami space and began grilling skewers using carefully saved cuts of meat. In an era marked by food scarcity, the warmth and sincerity of those early offerings resonated deeply, allowing Niigataya to take root within the local community.


For decades, guests have described Niigataya as nostalgic—not simply because of its age, but because of the atmosphere shaped by people. Longtime patrons, devoted staff, and countless visitors have all contributed to a space that feels quietly reassuring, as if it welcomes every story brought through its doors.


Now reimagined in Ginza, that same spirit is expressed through an omakase-style yakitori course. Fresh ingredients sourced from Niigata and across Japan are grilled using fire-control techniques refined over generations. While honoring its secret seasonings and time-honored methods, the Ginza restaurant elevates them for a modern setting—offering a natural evolution where tradition and innovation exist in quiet balance.
