Good to Know
Step through the door, and this is no longer the Ginza you expected. The room unfolds like a cenote drawn from ancient Maya myth — a hidden, sacred spring — and the instant you enter, an enveloping soundscape seems to switch something on, like a time machine igniting. A resurrected table, brought back to life by artisans from Tsubame-Sanjo, stirs every sense at once, opening onto a singular journey through time — from the birth of the earth to the Age of Discovery. Rooted in the ancient Inca Empire, the tasting course gently revives food's buried strata, layers built up over centuries of conquest and migration, through ethically sourced ingredients. What follows is meant to linger the way a film does: an evening etched into memory.
The room favors restraint over spectacle: low stone tones, considered acoustics, a counter seating only two for those who want to watch the kitchen work, and a private room set within it for guests who prefer to disappear into the meal itself. An ethical sensibility runs quietly through the space, extending into small gestures for those marking an occasion — a custom message plate, or a bouquet of dried flowers chosen to outlast the evening. It functions as a premium restaurant for intimate moments — birthdays, anniversaries, unhurried conversation.
At the helm is Executive Chef Masao Andres Matsunae Guzmán, who trained at Kohou, a Chinese restaurant in Tokyo, and later at MAZ, an innovative kitchen recognized among Asia's leading tables. What he carried forward was an ambition beyond technique alone: to treat cooking as a language capable of speaking about land, history, and memory. That ambition anchors the kitchen's guiding idea — food as a journey through time, with harmony of flavor held by one consistent thread from first course to last.
Representative dishes trace a route from pre-Columbian foodways through centuries of migration, reframed with Japanese precision, arriving less as individual plates than as chapters in a story, with seafood sourced through sustainable practices running throughout.
By the final course, little needs to be said. Ginza ETHICA does not ask to be remembered loudly — only that, for one evening in Japan, time seemed to move a little differently.
