Teppanyaki Mitaki Akasaka carries the lineage of a celebrated teppanyaki restaurant in Fukuoka's Sakurazaka district — a reservation that has remained one of the most sought-after in Kyushu for years. The Tokyo branch does not announce that connection loudly. It simply maintains the same standards, in a different city, at a counter where every seat faces the plate.
Chef Makoto Fukui began in French kitchens in 1994. The years that followed took him through some of Okayama's most respected hotel restaurants before he eventually became the driving culinary force at the Fukuoka original. That background in French cuisine is not decoration. It shapes the arc of every course — in house-made sauces built from classical technique, in starters that shift the palate with quiet precision, in desserts crafted by a dedicated pastissier whose work arrives at the end of the evening like a considered closing statement.
The ingredients are sourced by the chef's own eye: Kuroge Wagyu sirloin, Kobe beef, live Ise lobster, natural abalone. Premium seafood and carefully selected Japanese wagyu share the iron plate in a kaiseki-spirited sequence that moves with unhurried confidence.
