Step into Uosaburo, a historic venue in Fushimi-Momoyama shaped by centuries of history.


Founded in 1764 by Sanuki-born Saburobei, a chef for Edo-period feudal lords, Uosaburo originally showcased Seto Inland Sea fish from Fushimi Port and Kyoto heirloom vegetables.


Its wooden walls have witnessed centuries of history, including the legendary Battle of Toba-Fukashi, where activist samurai fought to restore imperial rule. Bullet holes from that clash remain in the storefront’s latticework.


Today, young protege Araki Yuichiro, son of the ninth-generation owner, leads Uosaburo, honoring its legacy while refreshing the centuries-old menu. Using water from the restaurant’s well and seasonal Kyoto vegetables, he creates refined dishes, with fresh sea bream and other ingredients delivered daily to capture the region’s authentic flavors.


The evening starts with a warm greeting, followed by a live string quartet from the Japan Century Symphony Orchestra. The rich, resonant tones of the string instruments blend with the soft creak of the wooden floors, creating a calm, immersive atmosphere.


Enjoy a curated Dassai sake tasting between performances. To complement its floral notes, Uosaburo prepares seasonal appetizers.
