Nagoya is a city rich with history and culture, which extends to its food. Its local cuisine, Nagoya meishi, places a heavy focus on miso, even more so than other areas in Japan. In this cooking class, you’ll make an ichiju sansai meal — translating to “one soup, three dishes”, this is the basic meal structure in traditional Japanese cuisine — with a distinct local twist. Using red miso, a Nagoya staple characterized by a slightly stronger and richer flavor than regular miso, you’ll make a special sautéed chicken as well as miso soup.
Complete your ichiju sansai meal by rolling a Japanese omelet, shaping delicious onigiri (rice balls) and making a spinach salad incorporating the special red miso. During the class, you’ll also learn about Nagoya’s history and how it has impacted the development of its food culture.
