Chef Kenjiro Hashida was born in 1979 into a respected sushi family and began training with his father at age 12. He developed a style rooted in Edomae tradition while following the Shu Ha Ri principle: honor the past, refine the craft, and explore new boundaries. He is known for turning sushi into a rich, multi-sensory experience.
This experience brings Chef Hashida’s philosophy straight to you. In a hotel suite or private residence, he arrives with the freshest seasonal ingredients from Japan’s top markets. The room fills with the clean aroma of vinegared rice and freshly sliced fish as each course is prepared.
Guests watch from just a few steps away as rice is shaped with practiced movements and delicate slices of seafood are brushed with sauce or finished with a touch of seasoning.
