In the coastal charm of Yaizu, where history and seafood collide, this experience invites you to dive into a world of flavors, tradition, and the art of saba, all served with a side of cultural magic.


At this family-run fish wholesaler with a rich legacy since 1832, you’ll be immersed in the timeless craft of saba (mackerel) filleting. Located in a beautifully renovated 110-year-old kominka (traditional Japanese house), this experience offers an authentic glimpse into Yaizu’s fishing heritage and the art of preparing one of Japan’s most famous fish.


Under the expert guidance of your host, you’ll learn how to sharpen a traditional knife and fillet fresh saba with precision.With decades of expertise in processing saba, they will share their knowledge of the entire journey. This includes the sustainable "tamosukui" fishing method used by local fishermen to the rigorous process of auctioning, processing, and finally preparing the fish for a perfect sushi course.


Once you’ve honed your filleting skills, the real treat begins: a mouthwatering saba-sushi gozen (set meal) course. The saba you’ve filleted will be grilled to perfection and served alongside a traditional sushi course and ramen made from rich saba broth.


Premium local sake (or soft drinks for minors) will accompany your meal, further enhancing the flavors and allowing you to savor the essence of Yaizu’s seafood culture.


As you indulge in this exquisite lunch, a live shamisen performance will fill the air, adding a layer of serene elegance to your experience. Played by Tomoko, the hostess and 7th generation of the Iwasei family, the music sets the perfect mood for your meal in this peaceful, rustic setting by the irori (traditional hearth).You can also experience matcha in the tea ceremony style.
