Perhaps the best beef in Kobe is served here, with dedicated professionals working hard to ensure that only the highest quality cuts are selected. 30-month-old cows are butchered and aged for a long term to remove excess moisture and draw out its amino acids. This, in turn, softens the beef fat and lowers its melting point so the meat quickly becomes warm even when served rare. The fine marbling and soft texture of the meat itself are proof that this fine dining establishment truly earned its Michelin status.
