The talented Chef Fukuya of l'algorithm defines his approach to the world of gastronomy by viewing the various elements of each dish as components of numerical formulae. These algorithms form a set of rules that define the approach he takes in the kitchen of his restaurant.
All parts of the equation for this outstanding French cuisine have been thought out extremely carefully, from the food items and wine options to the layout and service. Exclusively offering omakase set menus (and drink pairings) which change throughout the year, each experience at l'algorithm promises to be a fresh new insight into the inventive mind of the chef and his culinary mathematics.
Chef Fukuya experiments with various flavor combinations in dishes such as the uni mousse with bitter bergamot. While most would discount them as an unusual pair, Fukuya sees them as a culinary opportunity. Expect most, if not all, of the dishes served at l'algorithm to be just as surprising and excellent.
