In the chic district of Daikanyama is a single-starred French restaurant with a growing reputation. Its name is a statement of intent — simplicity executed to perfection is the aim here. The word also has connotations of genuineness and authenticity, qualities which are evident in every dish on the menu, and every smile from the owner. Aihara-san is a seasoned veteran of France, including regions outside of the capital, giving him a wider knowledge than many of his esteemed peers. After returning to Japan, he scoured the land to find the perfect products to fit his own innovative ideas, and those which would do justice to those classic dishes he grew to love in his formative years on the continent. Seafood is his speciality. He smokes his dishes or marinates them in vinegar. Expect dishes which fuse Japanese seafood ingredients with French classics, such as the black scraper fish with blue cheese and liver, and the jellied shrimp consommé. He even incorporated dried sardines into his sauces, which are then drizzled over classic beef and poultry dishes for an oceanic twist.
