Description
Good to Know
Tucked into the lower level of Shinagawa East One Tower, Sushi Oumi Shinagawa offers a serene escape where Edo-style craftsmanship meets contemporary elegance. The moment guests step inside, they are welcomed by warm lighting, polished wooden counters, and the subtle fragrance of freshly shaved katsuobushi, setting the tone for an intimate sushi experience shaped by precision and harmony.
The chef showcases his mastery through a carefully structured omakase, beginning with seasonal appetizers that highlight ingredients sourced at peak freshness. Each piece of nigiri is shaped with a lightness that reflects years of training—rice seasoned with a delicate balance of vinegars, paired with meticulously prepared neta such as buttery otoro, sweet Hokkaido uni, firm yet tender white fish, and the shop’s signature marinated akami. The restaurant is also known for its exquisite tsumami: dishes like simmered octopus, grilled nodoguro, or lightly cured kohada that reveal deep respect for traditional Edomae techniques.
Beyond technical finesse, the experience at Sushi Oumi Shinagawa is defined by its sense of calm. With limited seating and attentive hospitality, guests are given space to savor each bite at a gentle, unrushed pace. As the course concludes with a comforting bowl of miso soup or a perfectly rolled tamago, diners leave with a lingering sense of balance—an elegant fusion of seasonality, craftsmanship, and the quiet beauty of Japanese culinary philosophy.
