The chefs prepare Edo-style sushi, but add a modern twist to the classic preparation to bring out the best flavor of each fish. Red vinegar is typically used in Edomae sushi, but at Sushi Sanpo, they combine three types of vinegar to create their own ideal sushi rice. This combination of old and new makes for flavorful dishes that are both delicious and artful.
