Nestled on a quiet side street just a short walk from Ogikubo Station, Sushi Shutatsu is a refined hidden gem where guests can enjoy authentic Edo-style sushi and the delicate art of Japanese hospitality. Helmed by a master chef with over 30 years of experience at renowned sushi establishments, the restaurant offers an intimate counter setting that blends tradition, creativity, and calm sophistication.


The seafood is sourced daily from Toyosu Market, with premium tuna carefully selected from the famed wholesaler Yamayuki. Among its highlights is the rare tuna “nouten” (head meat), a precious cut that comprises only 0.5% of the fish and melts luxuriously on the palate. The sushi rice is made with Hatsushimo rice from Gifu Prefecture and prepared with either white or red vinegar depending on the season and the day’s ingredients, ensuring perfect harmony with each piece of sushi.


A hallmark of Sushi Shutatsu is its innovative “Sushi × Japanese Tea Pairing Course.” Developed in collaboration with a historic tea house boasting over 200 years of heritage, the course features four or more premium teas—including Gyokuro, Kenjo Sencha, and Matcha—meticulously paired to complement every stage of the omakase journey. This non-alcoholic pairing elevates the natural umami of sushi, creating a new expression of Japanese harmony. Guests are gifted a beautifully wrapped tea set featuring the same teas used in the course, complete with an English brewing guide to continue the experience at home.


For those seeking an even deeper cultural immersion, the restaurant also offers a Yukata Dining Experience, where guests can enjoy their omakase dressed in traditional yukata provided by the restaurant. The experience can be enhanced with a Cheki instant photo session, capturing an elegant memory of your time in Japan.

Yukata Experience Notice


Yukata sizes generally fit guests between 150–190 cm in height, but availability may be limited for certain body types. If you have a broader or larger build, please let us know in advance so we can prepare the best fit. Same-day or last-minute reservations for the Yukata Experience may not be available.


The yukata will be worn inside the restaurant, so guests are kindly requested to keep their undergarments on. Dressing time varies by individual, and the full experience—including the omakase—may take about 2–3 hours.


If you arrive late, dressing time or course dishes may be adjusted to maintain the schedule. Hair styling and makeup are not included. Please note that the yukata may become stained during the meal; cleaning fees may apply in severe cases.
