What a lovely experience making Udon noodles. Chef Chinki was most welcoming and clearly explained every step. She is very passionate about cooking with the best possible fresh ingredients to accompany the udon noodles. Many of them were new to me. Thank you for sharing your skills.

A great session with Takako, learning about Japanese home cooking and the benefits for fermented foods. Tasted koji, kombu, mirin and a variety of soy sauces. Takako then made some healthy and delicious dishes, which was a good change from some heavier restaurant meals. The recipes were also provided! Would definitely recommend.

An absolutely wonderful experience. Chef Yoshi and Amo are excellent hosts and teachers. The food was great, and the chef’s broth is the best I’ve ever had. My son said this was his favorite part of the trip. I absolutely recommend their class. I can’t wait to make ramen and gyoza at home!

I had the absolute pleasure of attending the fermentation class today! It was incredibly eye-opening to see how knowledge of miso and other traditional elements can be beautifully applied to everyday cooking. From appetizers and mains to desserts, I was truly amazed by the versatility of these fermented ingredients. The instructor was exceptionally patient and attentive, taking the time to answer all of my questions with great care. I highly recommend this class to anyone looking to elevate their culinary journey and experience the true magic of fermentation!

This was such a fun experience and was a highlight of our trip! Yuichi taught us all about the history of fake food making and it was really interesting. He walked us through the whole process and now we have a really cool souvenir that sits on a shelf in our living room! I can't speak highly enough of Yuichi. Not only was he an absolute delight and did a great job communicating everything to us in English, he was so kind and fun. He made us laugh, we had a great time, and he even sketched us a map telling us where to go for lunch. I cannot recommend this experience highly enough!
