Each seat is lined with a cast-iron pot, designed by the shop and crafted by the renowned Sanjo Special Cast in Tsubame-Sanjo — an area already renowned for its metalwork — signaling the meal’s focus from the moment diners arrive.
Welcome to Sukiyaki Chikayo, a sukiyaki specialist restaurant led by an owner who is dedicated to using only the highest quality Japanese Black beef from the Tokyo Meat Market. Here, there are no vegetables or tofu — just pure, premium A4 and A5 wagyu. The meat is simmered in a carefully crafted blend of soy sauce and sugar, a simple yet perfected recipe passed down from her mother, Chikayo, after whom the restaurant is named. Chikayo mastered the "golden ratio" of flavors in her home cooking, and this legacy continues in every dish served.
The uncomplicated menu succeeds through painstaking attention to every element of the meal. The beef is grilled over a charcoal-powered iron pot, allowing its beautiful marbling to shine. The rice, a type of Koshihikari called Nita rice, is sourced from Shimane Prefecture and grown by the owner's in-laws. It is cooked in a gas pot all at once, ensuring a plump texture to complement the sukiyaki.
