Hidetaka Yamade aims to provide a warm atmosphere of clarity in his shop. His Sapporo sushi restaurant is famous for providing a high level of service, with a feeling of genuine friendship developed between the chef and guests.
The omakase set course consists of around eight appetizers and a dozen nigiri, showcasing the best that the waters surrounding Hokkaido have to offer. The appetizers provide some welcome variety, with dishes such as scallops wrapped in seaweed and shrimp served with kelp.
These quality dishes, along with an unwavering dedication to the comfort and happiness of his guests, has gained Hidetaka-san a well deserved Michelin rating, and a place among the best sushi restaurants on the island.
