The thirteen seats at the counter of this Roppongi sushi restaurant are hotly contested by the gourmands of Tokyo. If you’re lucky enough to land a seat here, you’ll be treated to an omakase meal featuring around a dozen of the best aged fish nigiri you’ve ever tasted. The chef is an expert in aging techniques, and his gizzard shad is a prime example of these skills.
The sushi rice is carefully prepared with a blend of vinegar made to match the fish. The beverage choices are likewise carefully selected, with bottles of Japanese sake from Tokyo, Mie, and Tohoku on offer. After receiving its Michelin star, the demand for Sushi Murase’s fish skyrocketed, so be sure to get ahead of the game when trying to secure a seat here.
