Welcome and discover Greek meze Meet your instructor in our central Athens studio and explore the tradition of meze: small dishes designed to be shared, combined and enjoyed slowly around the table. 2. Prepare seven dishes from scratch Working in pairs, create a generous selection of Greek meze using fresh ingredients, herbs, spices and olive oil. Make traditional phyllo entirely by hand, from mixing and kneading the dough to rolling it paper-thin and shaping your own cheese pies. Continue with dishes such as tzatziki, dolmades, baked peppers, eggplant rolls, soutzoukakia and a syrupy dessert. Your instructor demonstrates each technique step by step and explains how flavours and textures are balanced. No previous cooking experience is needed. 3. Share the meze feast Gather around the table and enjoy all seven dishes while they are fresh, tasting them together as Greeks do. The meal is accompanied by Greek wine, beer, soft drinks and water. Recipes are emailed after the class.
