Step into a quiet studio in Kappabashi where soba is not just made, but experienced at its most immediate and delicate form.


Surrounded by a district known for kitchen tools and craftsmanship, you enter a compact open kitchen focused on one thing: 100 percent buckwheat Jyuwari soba made and enjoyed within minutes.


The air smells lightly nutty from fresh buckwheat dough. No wheat flour is used here; only pure buckwheat is used, prepared in a way that makes Jyuwari soba easy to try even for beginners.


Traditionally, this type of soba is known to be difficult to shape. Still, here the process has been refined into a short, guided flow that preserves its natural fragrance and texture.


You begin by washing your hands and putting on an apron and gloves. The instructor shows each step, then guides you as you work the dough and use a traditional soba knife. The movements are calm and steady as the dough is cut into thin, even strands.


In just 30 minutes, your soba is ready and quickly handed to the staff for boiling. It is cooked briefly to retain its shape while developing a soft, earthy aroma. Served fresh and warm, it reflects the moment it was cut, with a distinct, lively texture.


This experience is all about timing. Jyuwari soba is at its best just minutes after it is made, when the aroma and flavor are strongest. Eating it right after cutting brings out a clear difference in taste that defines the whole session.


The studio itself is simple and functional, shaped for hands-on work rather than decoration. You may share the space with local participants, as it is also a place frequented by residents. After the meal, there is a short closing before departure. Any remaining noodles can be taken home, though they are best enjoyed on the same day to maintain quality.

  • This is a noodle-making facility only; soup is not prepared, and the recipe is a trade secret. No cooking experience is required, and no dress code applies
  • Sessions may include Japanese participants. Punctuality is required
  • Knives are used during the experience. Children under 4 must be supervised by a parent. Injuries from improper use of a soba knife are not covered by insurance, so please handle tools with care
  • As this is not a restaurant, we cannot accommodate individual preferences or special orders. Please check ingredients in advance for allergies. No halal-certified ingredients are used
  • Smartphones are not allowed, but staff will take photos. Noodles must be eaten the same day
