Restaurant Details
This was the first sushi restaurant to open up in Otemachi, and nowadays it’s linked directly to the station itself. Fast approaching their 2022 centenary, they have somehow managed to maintain high standards of consistency and authenticity over all those years.
The third generation chef draws upon the knowledge inherited from the older generations — the original rice vinegar recipe, for example — while putting his own stamp on the restaurant through his set menus and personal touches. One of his signature dishes is the conger eel, prepared with a mixed boiling and grilling method for an amazing texture.
Counter seats are available from which to watch it all come together, but private rooms are also available.
