The restaurant sits away from the main thoroughfares, its entrance unmarked by excess, inviting guests into a room where Japanese tradition is felt before it is explained.
Inside, the atmosphere unfolds slowly. Wood, stone, and soft light are arranged with seasonal intention, shifting subtly across the year to mirror the produce arriving from Japan's coastal waters. A tea room adjoining the counter allows the meal to open, on occasion, with a bowl of matcha—a gesture that sets the tempo for everything that follows: unhurried, considered, quietly ceremonial.
The kitchen's philosophy rests on restraint. Seafood, much of it drawn from the Goto Islands, is handled with attention to temperature and timing, while vinegar and soy sauce are prepared in house, each calibrated to draw out the character of the fish rather than mask it. The sushi was amazing, and I loved how the chefs explained where each fish came from. I could ask questions and even learn how to pronounce some of the fish names in Japanese, so I actually learned a lot during the meal. I normally don’t like squid or scallop, but this was the first sushi restaurant where I genuinely enjoyed the scallop!

The restaurant has a beautiful, quiet entrance without being intimidating. When you think of omakase, it can feel quite strict and severe, but I felt comfortable to talk and interact with both the staff and my seatmates.

Everything was delicious, but as a huge matcha lover, I especially loved that the experience ended with a traditional tea ceremony. It was such a beautiful and unexpected way to finish the omakase.
