The chef spent thirty years refining his craft at Nadaman, one of Japan's most respected names in traditional Japanese cuisine. That foundation runs quietly through everything served at this counter. Even the frying oil reflects that philosophy — a proprietary blend of high-purity cottonseed oil and cold-pressed white sesame oil, chosen to carry heat cleanly, preserve the integrity of each ingredient, and leave nothing heavy behind.
Among the seasonal offerings, the fresh abalone tempura leaves a lasting impression. Careful timing in the oil draws out a tender texture and the full fragrance of the sea. Live prawns, kept in a tank at the counter until the moment of preparation, move directly from water to batter without pause. Some things are better understood through eating than through description.
