Step into a quiet Kyoto home framed by a leafy garden, where everyday tradition is kept alive through fermentation and shared hands-on cooking.
Your host welcomes you into a warm tatami room and begins with the foundation of Japanese miso-making: koji. This living culture gently transforms soybeans into a deeply savory paste.
You will learn about the three main types of miso in Japan, rice miso, barley miso, and soybean miso, and how each develops its own color, aroma, and depth over time.
Instead of the usual long process of boiling whole soybeans, this session uses okara, the nutritious soy pulp left after making tofu. It is often overlooked, yet full of flavor and texture. Using okara makes the method simpler and more sustainable, while still honoring tradition.
You will mix and knead the ingredients by hand, feeling the soft, slightly grainy texture come together as the scent of soy and koji rises gently from the bowl. The steps are clear and beginner-friendly, and your host guides you closely, offering translation support and cultural insight throughout.
After shaping your miso, sit down to taste warm miso soup and freshly prepared okara mochi. The mochi has a gentle chew and nutty flavor, finished with a homemade miso sauce that adds a balanced savory sweetness.
As you eat, your host shares how fermented foods support gut health and how miso has long been part of daily life in Japan.
Before leaving, take a moment in the garden for photos and quiet reflection.
You will bring home about 500 g of your handmade miso, along with a recipe PDF so you can recreate the experience and continue the fermentation journey in your own kitchen.
