Master a multi-course Japanese menu at Noriko’s home cooking class in Tokyo. In this hands-on experience, you’ll make maki (rolled) sushi, chawanmushi (savory egg custard), miso soup, dashi stock, and a white sesame pudding for dessert. After cooking, enjoy your handmade meal with your host and classmates.
Noriko’s love for teaching Japanese cooking started in rural New Zealand, where she shared meals with locals. Back in Japan, she brings the same passion to her lessons, sharing authentic flavors that mix tradition with modern touches.
During the class, you will learn how to make maki sushi by perfectly seasoning the rice, selecting fresh ingredients, and rolling them into bite-sized pieces.
For chawanmushi, discover how to create a smooth, velvety custard with balanced flavors.
Learn to make miso soup by blending miso paste with delicate dashi for a comforting richness in umami.
You will also make dashi stock from scratch using kelp and bonito flakes to infuse dishes with deep umami flavor.
Finish your meal with a creamy, nutty white sesame pudding that offers a fragrant twist on traditional Japanese desserts.
