Nestled in the heart of Jimbocho, Tokyo, Tsuru Hachi is a sushi restaurant that offers a unique blend of traditional and contemporary sushi experiences. Known for its Edomae sushi, Tsuru Hachi is celebrated for its signature dish, the Tekka Maki, which is presented in a mille-feuille-like style. The menu features an array of exquisite dishes including black abalone, striped jack, tsubugai (whelk), mako sole, shako (mantis shrimp), chutoro (medium fatty tuna), conger eel, and sea urchin.
The restaurant is located at 2-chōme-4-1 Kanda Jinbōchō, Chiyoda City, and is easily accessible, situated in a quaint alley in Jimbocho. The intimate setting on the first floor includes a counter with six seats and a one-person table, making reservations essential due to the limited seating.
Tsuru Hachi exudes a warm and friendly atmosphere reminiscent of the Showa era, where photography is politely prohibited to maintain the serene dining experience. The restaurant allows for a la carte ordering, catering to individual preferences rather than strictly adhering to omakase, with ingredient cards displayed for easy selection.
The culinary legacy of Tsuru Hachi continues under the guidance of Chef Sato, who has taken over after the retirement of Master Ishimaru, a revered sushi chef with 60 years of experience. Chef Sato upholds the tradition of salt-steamed and live preparation of shellfish, as well as kombu-marinated fish, ensuring each dish is crafted with precision and care.
