Step into a compact studio in Asakusa where the focus shifts quietly from the bustle outside to the texture of flour in your hands.


Here, ramen begins not with broth, but with the noodle. Guided by a host who has built this experience around a clear philosophy, you will explore why the structure, thickness, and cut of noodles define the character of a bowl.


Many shops rely on outsourced noodles, but in this space, each strand is hand-shaped.


Your session starts with simple ingredients laid out neatly before you.


As water meets flour, the mixture begins to change, soft and slightly warm as it comes together under steady pressure. You will learn to roll, fold, and prepare the dough using techniques inspired by soba-making traditions that date back to the Edo period.


With the dough ready, your focus tightens. A soba knife cuts through the layers into clean, even strands, each stroke shaping the texture of your ramen. As they boil, the noodles loosen and turn glossy in the water.


Soon after, you sit down to a bowl built from your own work. The plant-based soup, inspired by Shojin Ryori, has a gentle depth that lets the noodles stand out.

  • This is a noodle-making facility only; soup is not prepared, and the recipe is a trade secret. No cooking experience is required, and no dress code applies
  • Sessions may include Japanese participants. Punctuality is required
  • Knives are used during the experience. Children under 4 must be supervised by a parent. Injuries from improper use of a soba knife are not covered by insurance, so please handle tools with care
  • As this is not a restaurant, we cannot accommodate individual preferences or special orders. Please check ingredients in advance for allergies. No halal-certified ingredients are used
  • Smartphones are not allowed, but staff will take photos. Noodles must be eaten the same day
