Step into a professional sushi counter in Tokyo and learn what it takes to craft Edomae-style sushi under the guidance of a seasoned chef.
At Jukusei Sushi Wagokoro, an upscale restaurant just five minutes from Shibuya Station, Head Chef Katsuro leads this hands-on class, sharing techniques honed over 20 years in luxury hotels and Michelin-starred kitchens across Japan.
The session begins with an introduction to the day’s menu, built around the freshest seasonal ingredients.
You will then learn core sushi-making techniques, including how knife work changes the texture and flavor of fish.
The chef also demonstrates slicing methods and explains fish aging techniques, along with key sushi etiquette and insights into Japanese dining culture.
After the demonstration, you will prepare nigiri and temaki under the chef's professional guidance. In total, you will make 15 pieces of sushi and enjoy them as part of a full-course meal that also includes ten additional dishes and sides.
