A nod to the name of the restaurant, you can enjoy dishes that use sprouted beans, vegetables, and grains which are abundant in enzymes, vitamins, and minerals. One of their slogans is “Shindo-fuji,” which emphasizes the connection between humans and the environment, and the healthfulness of local and seasonal foods. It is similar to the English phrase, “You are what you eat.” Their other slogan is “Ichimotsu-zentai” which means using the whole thing, as whole foods have well-balanced nutrition. For lunch, they have the inner-body cleansing lunch with the fresh vegetables and fruits smoothie, today’s veggie lunch, and vegetable curry set.
