This sushi restaurant is located on the third floor of Four Seasons Hotel. From the windows of Sushi Wakon, you’ll be able to view the 800-year-old Sukisuyuen pond garden while you savor the delicious sushi treats. Sushi Wakon’s kitchen is headed by Masashi Tamagushi who pays close attention to extreme details like the temperature of the sushi.
All of the ingredients are flown in daily from Tsukiji Market, ensuring both quality and freshness. Each piece of sushi has the perfect amount of air between the rice grains, which will reflect as a slight “sink” when it is placed on the sushi board. This delicate texture makes it possible for the sushi bite to come apart beautifully in the mouth.
Prepared Edomae way, Sushi Wakon has no shortage of culture. The counter is made of intricate Hinoki wood that’s over two centuries old, made by Yasuimoku Komuten which is a company consisting of Kyoto craftsmen. Even the metal tiles on the wall behind the counter are handmade, and it resembles the beautiful Japanese art of origami.
