A great session with Takako, learning about Japanese home cooking and the benefits for fermented foods. Tasted koji, kombu, mirin and a variety of soy sauces.
Takako then made some healthy and delicious dishes, which was a good change from some heavier restaurant meals.
The recipes were also provided!
Would definitely recommend.

I had the absolute pleasure of attending the fermentation class today! It was incredibly eye-opening to see how knowledge of miso and other traditional elements can be beautifully applied to everyday cooking. From appetizers and mains to desserts, I was truly amazed by the versatility of these fermented ingredients.
The instructor was exceptionally patient and attentive, taking the time to answer all of my questions with great care. I highly recommend this class to anyone looking to elevate their culinary journey and experience the true magic of fermentation!

If you’re interested in checking out Yatai food stalls in Fukuoka, this is the way to do it! It’s also a great first-night adventure in the city because Bruce is extremely knowledgeable and shares generously. My partner and I spent 4+ hours with Bruce, and we’d do it again in a heartbeat. We walked all over the city and stopped in three different Yatai stalls, eating tapas/pintxos style. Every bite of food and each drink we tried was delicious. It was a great intro to Fukuoka/Hakata, and a perfect way to visit the Yatai stalls, which could be intimidating to navigate for the first time on your own.

To get straight to the point, Yuki is a fantastic cooking instructor (also a lovely person) and I would highly recommend her cooking classes to anyone interested in learning to make Japanese cuisine at home!
In the ramen/gyoza class we took, Yuki walked us through the elements of the dishes we made and also highlighted what to do for different regional variations. Any questions I had (sometimes before I could ask it) she was able to answer! e.g. the purpose of different ingredients, their alternatives if you can't easily find them outside Japan, how to cook for friends with dietary requirements, etc etc.
Quick note: I recommend that you bring your appetite because 1) not only is the food you make so delicious; but 2) there's a lot of it!
By the end of the class, my partner and I felt very confident we could easily apply what we had learnt back home and cook for (and impress) ourselves, family and friends.
