Loved the cooking class with Midori. I am gluten intolerant, not coeliac, she was able to accommodate and made sure all food was safe. We made onigiri, gyoza and katsudon, everything was delicious! Midori San is a great host and we had a lovely chat about a lot of things including Japanese cuisine and places to visit in or around Kyoto. I can definitely recommend!

This is the best class for anyone who loves cooking. It is also a new and fun class for those who don't like cooking. Also, this cafe, which hosts this tour, is very friendly and caring to everyone. It has various souvenirs made with kome rice, and it is a very nice cafe that is eco-friendly. I will try to make onigiri in the way they taught me. If you go to Tokyo, Japan, you should definitely take this class. Not only will you have fun, you can also eat your own delicious onigiri. この店最高 :)

These cooking classes are designed for both beginners and seasoned cooks who wish to add a new skill to their kitchen repertoire. With step-by-step guidance, you'll discover the intricacies of selecting the right ingredients, balancing flavors, and perfecting the traditional techniques needed to create a heartwarming bowl of gluten-free miso soup. What to Expect from Gluten-Free Miso Soup Cooking Classes

In gluten-free miso soup cooking classes, you'll be introduced to a variety of miso types and how each brings a unique taste and nutritional profile to the soup. You will explore different kinds of dashi (broth bases), ensuring you can recreate the depth of flavors that traditional miso soup is known for, all while keeping it gluten-free.

The classes typically start with an introduction to the basic ingredients: miso paste, dashi, tofu, seaweed, and an assortment of seasonal vegetables. Understanding the role of each ingredient is crucial in preparing a balanced and delightful miso soup. Instructors will demonstrate traditional Japanese cooking techniques, such as the correct way to dissolve miso paste and the best way to cut vegetables for optimal texture and taste.

You will also learn about various gluten-free ingredients that can be used in miso soup, accommodating different dietary restrictions. This includes substituting barley miso for rice or soybean-based miso and using gluten-free soy sauce as an alternative seasoning. These classes ensure that you create a version of miso soup that preserves the essence of the original while meeting your gluten-free requirements.
