I had the absolute pleasure of attending the fermentation class today! It was incredibly eye-opening to see how knowledge of miso and other traditional elements can be beautifully applied to everyday cooking. From appetizers and mains to desserts, I was truly amazed by the versatility of these fermented ingredients. The instructor was exceptionally patient and attentive, taking the time to answer all of my questions with great care. I highly recommend this class to anyone looking to elevate their culinary journey and experience the true magic of fermentation!

Loved the cooking class with Midori. I am gluten intolerant, not coeliac, she was able to accommodate and made sure all food was safe. We made onigiri, gyoza and katsudon, everything was delicious! Midori San is a great host and we had a lovely chat about a lot of things including Japanese cuisine and places to visit in or around Kyoto. I can definitely recommend!

From the moment we stepped into the private tea tasting, it felt like entering a completely different world—one defined by calm, care, and an almost reverent appreciation for tea. What truly elevated the entire experience, however, was our teacher. Their depth of knowledge was nothing short of astonishing. Every detail—from the origin of the leaves to the subtle differences in processing methods—was explained with such clarity and passion that it transformed each sip into a story. You could tell this wasn’t just expertise; it was a genuine love for the craft. The tea itself was absolutely exquisite. Each variety we sampled was more nuanced and flavorful than the last, with layers of aroma and taste I had never noticed before. The experience was paired with a thoughtfully prepared selection of food that complemented the teas beautifully. Every bite felt intentional, enhancing the tasting experience and making the whole session feel indulgent without being overwhelming. What surprised me most was just how fun it all was. This wasn’t a stiff or overly formal class—it was engaging, interactive, and filled with moments of delight and discovery. We laughed, asked questions, compared favorites, and left feeling not only more knowledgeable but genuinely inspired. All in all, this private tea tasting was an unforgettable experience and such a unique, enjoyable way to explore the world of tea. I would wholeheartedly recommend it to anyone—even those who think they already know tea.

This is the best class for anyone who loves cooking. It is also a new and fun class for those who don't like cooking. Also, this cafe, which hosts this tour, is very friendly and caring to everyone. It has various souvenirs made with kome rice, and it is a very nice cafe that is eco-friendly. I will try to make onigiri in the way they taught me. If you go to Tokyo, Japan, you should definitely take this class. Not only will you have fun, you can also eat your own delicious onigiri. この店最高 :)

Pescetarian Miso Soup: A Taste of Umami

Dive into the world of pescetarian delights where the balance of tradition and healthful ingredients come together in our carefully curated miso soup classes. With the rising popularity of pescetarian diets, which emphasize fish as a primary protein source alongside plant-based foods, miso soup serves as a perfect illustration of how delicious and nourishing this lifestyle can be. In these classes, you will learn to prepare various versions of miso soup, each tailored to enhance the natural flavors of fresh seafood and seasonal vegetables, all while maintaining the essential elements of this iconic Japanese dish.

Miso soup is more than just a starter; it's a symbol of Japanese culinary artistry and nutritional wisdom. Our classes aim to teach you the fundamentals of crafting authentic miso soup using dashi, a traditional fish stock, combined with the rich, complex taste of fermented miso paste. You will explore the natural umami flavors and how they can be beautifully balanced with ingredients like seaweed, tofu, and a variety of vegetables, offering a wide range of textures and aromas.

Experience the Art and Science of Cooking Miso Soup

Each class is designed not just for beginners but also for those looking to deepen their knowledge of Japanese cuisine and pescetarian cooking. You'll be guided by culinary experts who will unpack the history, the subtle techniques, and the benefits of various types of miso, from the commonly known white miso to the robust red and even the unique regional varieties. In fact, each type of miso brings its own character to the bowl, influenced by factors like fermentation time and ingredient blends.

The classes involve hands-on activities and group discussions, making them interactive and informative. You will gain practical skills such as how to properly select and prepare fresh fish, how to incorporate seasonal vegetables that pair perfectly with miso, and most importantly, how to adjust and perfect the soup according to personal taste and dietary needs.
