Super Great time with Bruce, he ensured the evening stayed joyful, fun and engaging! It was not awkward and he was insightful, friendly and made us feel so welcomed! His warm and knowledgable approach made the food tour amazing for my family and I. Take note, I had 3 elderly and 5 adults! He managed it all with grace and poise and I thank you again for an evening to remember, SEE YOU AGAIN BRUCE! thank you

A great session with Takako, learning about Japanese home cooking and the benefits for fermented foods. Tasted koji, kombu, mirin and a variety of soy sauces. Takako then made some healthy and delicious dishes, which was a good change from some heavier restaurant meals. The recipes were also provided! Would definitely recommend.

A definite highlight of our trip to Japan. From the moment we walked in, Midori-san showed us great hospitality by serving us tea and sweets. She is very friendly and lively, and we felt right at home. She asked about our itinerary and gave us detailed recommendations. This was close to the end of our Japan trip, but I'd strongly recommend booking this near the start so you can benefit most from her suggestions! The cooking class was great and Midori-san was very patient and clear in her instructions. We made vegan onigiri, gyoza and ramen. The onigiri was surprisingly simple to make and we also received printouts of the recipe. After only being back in the US for a few days, I have already made onigiri for lunch. The gyoza and ramen were equally delicious. Make sure to come with an empty stomach! After we finished the food, she even walked us to a nearby supermarket so we could pick up the ingredients to make them at home. Overall, Midori-san went above and beyond to make this a great experience for us. There are of course many things to do in Kyoto, but as a tourist it's rare to be able to have an experience like this where you are welcomed inside a local's home. I strongly recommend this class.

One of the highlights of our trip. Midori is very well informed and likes to share knowledge about the food and culture. She gives shopping tips not only for food items but also for other hobby-related stuff like knitting or sawing. She even took us to a local supermarket to show what products are available and where to get them. Because Midori prepared the easy stuff in advance the cooking class was able to cover 3 whole recipes with a lot of background info. We should have done the class in the beginning of our trip because of all the good tips. We wish Midori all the best!

I had a very enjoyable and educational cooking class at Yuka's home. Everything was explained well, including the background of Shojin Ryori. The visit to the supermarket afterwards was also a real added bonus. Thank you, Yuka, for the wonderful day in your kitchen.

If you’re interested in checking out Yatai food stalls in Fukuoka, this is the way to do it! It’s also a great first-night adventure in the city because Bruce is extremely knowledgeable and shares generously. My partner and I spent 4+ hours with Bruce, and we’d do it again in a heartbeat. We walked all over the city and stopped in three different Yatai stalls, eating tapas/pintxos style. Every bite of food and each drink we tried was delicious. It was a great intro to Fukuoka/Hakata, and a perfect way to visit the Yatai stalls, which could be intimidating to navigate for the first time on your own.

Loved the cooking class with Midori. I am gluten intolerant, not coeliac, she was able to accommodate and made sure all food was safe. We made onigiri, gyoza and katsudon, everything was delicious! Midori San is a great host and we had a lovely chat about a lot of things including Japanese cuisine and places to visit in or around Kyoto. I can definitely recommend!

Yuka's class was fantastic! She provided cultural context on shojin ryori traditions which helped bring special meaning to our cooking. I got SO many helpful, practical tips for cooking each element of the meal that I'm so excited to replicate at home. I'm definitely planning on taking more of her classes when I return to Japan in the future.

Explore the World of Vegetarian Dashi Food Experiences

Japan is renowned for its culinary diversity, and one of its most intriguing offerings is dashi, a fundamental broth used in Japanese cuisine. While traditionally made with fish, vegetarian options have emerged to cater to different dietary preferences. Our curated list of vegetarian dashi food experiences invites you to savor the unique umami flavor without compromising on your vegetarian lifestyle. These experiences highlight the rich, savory depth that dashi brings to dishes, offering you a journey through Japan’s innovative and flavorful plant-based offerings.

What Makes Vegetarian Dashi Unique?

Vegetarian dashi allows food lovers to enjoy the quintessential Japanese broth without any animal products. Typically, dashi brings a complex layer of flavor to a wide variety of dishes. Traditional dashi uses dried bonito flakes, but vegetarian versions achieve the same depth of flavor by utilizing ingredients like dried shiitake mushrooms, kombu seaweed, and sometimes even additional vegetables for a robust taste. These ingredients are naturally rich in umami, the savory taste that defines many Japanese soups and sauces. By infusing these elements into hot water, chefs create a base that enhances any dish with subtlety and richness.

One of the highlights of vegetarian dashi is its ability to showcase the natural flavors of the ingredients used. Kombu seaweed imparts a hint of the ocean, while shiitake mushrooms bring an earthy depth to the broth. These elements combine to deliver a satisfying bowl of soup or to serve as the foundation for a variety of recipes, from noodle dishes to soothing hot pots.

Discover Exciting Vegetarian Dashi Dishes

Embarking on a vegetarian dashi food experience means indulging in a myriad of delicious Japanese dishes where this broth plays a central role. Consider enjoying a piping hot bowl of miso soup made with a vegetarian dashi base, offering a comforting and protein-rich start to any meal. Alternatively, explore the delicate flavors of a vegetarian ramen bowl, where the dashi acts as the perfect complement to tender noodles and a variety of fresh vegetables.

Vegetarian hotpot experiences also rely heavily on dashi, where you can cook an assortment of vegetables, tofu, and sometimes noodles in a communal pot, allowing the broth to soak into each ingredient. The result is a comforting and nutritious meal that warms both the body and soul. Furthermore, you might find vegetarian versions of traditional Japanese rice dishes, where dashi is used to infuse flavor directly into the grains, creating a simple yet profound culinary experience.

Whether you are a lifelong vegetarian, exploring plant-based options, or simply eager to experience the delicate complexity of vegetarian dashi, these culinary experiences promise a unique taste of Japan. Each dish you'll encounter is a testament to the creativity and adaptability of Japanese cuisine, ensuring a memorable taste journey without the use of animal products.
