A definite highlight of our trip to Japan. From the moment we walked in, Midori-san showed us great hospitality by serving us tea and sweets. She is very friendly and lively, and we felt right at home. She asked about our itinerary and gave us detailed recommendations. This was close to the end of our Japan trip, but I'd strongly recommend booking this near the start so you can benefit most from her suggestions! The cooking class was great and Midori-san was very patient and clear in her instructions. We made vegan onigiri, gyoza and ramen. The onigiri was surprisingly simple to make and we also received printouts of the recipe. After only being back in the US for a few days, I have already made onigiri for lunch. The gyoza and ramen were equally delicious. Make sure to come with an empty stomach! After we finished the food, she even walked us to a nearby supermarket so we could pick up the ingredients to make them at home. Overall, Midori-san went above and beyond to make this a great experience for us. There are of course many things to do in Kyoto, but as a tourist it's rare to be able to have an experience like this where you are welcomed inside a local's home. I strongly recommend this class.

One of the highlights of our trip. Midori is very well informed and likes to share knowledge about the food and culture. She gives shopping tips not only for food items but also for other hobby-related stuff like knitting or sawing. She even took us to a local supermarket to show what products are available and where to get them. Because Midori prepared the easy stuff in advance the cooking class was able to cover 3 whole recipes with a lot of background info. We should have done the class in the beginning of our trip because of all the good tips. We wish Midori all the best!

I had a very enjoyable and educational cooking class at Yuka's home. Everything was explained well, including the background of Shojin Ryori. The visit to the supermarket afterwards was also a real added bonus. Thank you, Yuka, for the wonderful day in your kitchen.

Loved the cooking class with Midori. I am gluten intolerant, not coeliac, she was able to accommodate and made sure all food was safe. We made onigiri, gyoza and katsudon, everything was delicious! Midori San is a great host and we had a lovely chat about a lot of things including Japanese cuisine and places to visit in or around Kyoto. I can definitely recommend!

Yuka's class was fantastic! She provided cultural context on shojin ryori traditions which helped bring special meaning to our cooking. I got SO many helpful, practical tips for cooking each element of the meal that I'm so excited to replicate at home. I'm definitely planning on taking more of her classes when I return to Japan in the future.

I had an incredible time learning authentic Nagoya home cooking! Unlike other classes where you just watch and eat, this was completely hands-on, which made a huge difference. Yuko-san and her family were so welcoming that the evening felt more like a warm family gathering than a formal lesson. If you want to experience the true heart of Nagoya’s food culture beyond just sitting in a restaurant, this is the perfect way to do it. I will definitely be making that tebasaki when I get back home!

Nice lesson, tasty recipes, accomodating host. With the recipes sent afterwards, at least the oyakodon should be well reproducible back home, miso soup maybe not as it heavily relies on good miso. Looking forward to try it out.

Midori and the class were amazing! We had such a great time learning how to cook traditional Japanese foods and about the Japanese culture. Midori was not just helpful with cooking skills; also so helpful recommending places to visit and experience during our time in Japan. We had a fun time and the food we made was delicious! Highly recommend Midori’s Kyoto Kitchen cooking class. Thank you, Midori! Arigato gozaimasu!

Dashi is a fundamental ingredient in Japanese cuisine, an essential component that infuses rich umami flavor into a wide array of dishes. Whether you're a seasoned cook or a beginner in the kitchen, enrolling in a Dashi Cooking Class is an opportunity to deepen your understanding of Japanese culinary traditions. These classes are designed to demystify the process of making dashi and to show you how to incorporate this savory stock into various recipes.

In these classes, you will learn different methods of preparing dashi from scratch using quality ingredients such as kombu (kelp) and katsuobushi (bonito flakes). By understanding the nuances of crafting dashi, you'll gain insights into achieving the delicate balance of flavors that Japanese cuisine is known for. These classes are not just educational but are also an enjoyable culinary journey into Japanese culture.

Besides cooking, these classes often include discussions on ingredient sourcing, nutritional benefits, and the sustainable practices of using high-quality dashi components. You’ll walk away with not only the skills to replicate these dishes at home but also a richer appreciation of the cultural significance of what you're cooking.
