If you are looking for an authentic ramen making experience that caters to a vegan diet, look no further. I've been to many vegan cooking classes in the US for american dishes and wanted have a true ramen making experience in the heart of it all. Kaori delivered; 15/10 experience! Kaori is an exceptional host, chef, and great person. She was able to provide an experience through the market identifying the ingredients for the ramen and gyoza, open her home to create an exceptional meal, and provided translations to common phrases you need to get around Japan. In addition, she even gave recommendations to local restaurants and shops. My husband and I had such an amazing time making ramen and gyoza and were too full after 😅 it was a highlight of our first trip to Japan. Definitely would recommend to everyone to book this experience before you spend time at any other tourist attraction. This experience beats any view you pay for in the city.

A great session with Takako, learning about Japanese home cooking and the benefits for fermented foods. Tasted koji, kombu, mirin and a variety of soy sauces. Takako then made some healthy and delicious dishes, which was a good change from some heavier restaurant meals. The recipes were also provided! Would definitely recommend.

A definite highlight of our trip to Japan. From the moment we walked in, Midori-san showed us great hospitality by serving us tea and sweets. She is very friendly and lively, and we felt right at home. She asked about our itinerary and gave us detailed recommendations. This was close to the end of our Japan trip, but I'd strongly recommend booking this near the start so you can benefit most from her suggestions! The cooking class was great and Midori-san was very patient and clear in her instructions. We made vegan onigiri, gyoza and ramen. The onigiri was surprisingly simple to make and we also received printouts of the recipe. After only being back in the US for a few days, I have already made onigiri for lunch. The gyoza and ramen were equally delicious. Make sure to come with an empty stomach! After we finished the food, she even walked us to a nearby supermarket so we could pick up the ingredients to make them at home. Overall, Midori-san went above and beyond to make this a great experience for us. There are of course many things to do in Kyoto, but as a tourist it's rare to be able to have an experience like this where you are welcomed inside a local's home. I strongly recommend this class.

One of the highlights of our trip. Midori is very well informed and likes to share knowledge about the food and culture. She gives shopping tips not only for food items but also for other hobby-related stuff like knitting or sawing. She even took us to a local supermarket to show what products are available and where to get them. Because Midori prepared the easy stuff in advance the cooking class was able to cover 3 whole recipes with a lot of background info. We should have done the class in the beginning of our trip because of all the good tips. We wish Midori all the best!

I had a very enjoyable and educational cooking class at Yuka's home. Everything was explained well, including the background of Shojin Ryori. The visit to the supermarket afterwards was also a real added bonus. Thank you, Yuka, for the wonderful day in your kitchen.

Loved the cooking class with Midori. I am gluten intolerant, not coeliac, she was able to accommodate and made sure all food was safe. We made onigiri, gyoza and katsudon, everything was delicious! Midori San is a great host and we had a lovely chat about a lot of things including Japanese cuisine and places to visit in or around Kyoto. I can definitely recommend!

Yuka's class was fantastic! She provided cultural context on shojin ryori traditions which helped bring special meaning to our cooking. I got SO many helpful, practical tips for cooking each element of the meal that I'm so excited to replicate at home. I'm definitely planning on taking more of her classes when I return to Japan in the future.

I had an incredible time learning authentic Nagoya home cooking! Unlike other classes where you just watch and eat, this was completely hands-on, which made a huge difference. Yuko-san and her family were so welcoming that the evening felt more like a warm family gathering than a formal lesson. If you want to experience the true heart of Nagoya’s food culture beyond just sitting in a restaurant, this is the perfect way to do it. I will definitely be making that tebasaki when I get back home!

Discover the Art of Making Dashi

Explore the world of Japanese culinary arts with classes focused on dashi, the quintessential Japanese stock that forms the backbone of many traditional dishes. Whether you're a seasoned chef or an enthusiastic home cook, these classes offer an immersive experience into the nuances of dashi preparation and its vital role in enhancing flavors. Participants will learn from expert instructors who guide them through the steps of selecting the finest ingredients, understanding the balance of umami, and mastering the techniques that transform simple ingredients into a rich, aromatic broth.

Hands-On Learning in Dashi Classes

These dashi classes are designed for hands-on learning, where you will not only observe but actively participate in the process of making this classic Japanese stock. Classes typically start with an introduction to the core ingredients used in dashi, such as kombu (kelp) and katsuobushi (bonito flakes). You'll discover how these ingredients contribute unique flavors and the concept of umami, often referred to as the "fifth taste." Each class provides all necessary ingredients and tools, ensuring participants can focus on learning and enjoying the experience rather than worrying about preparation.

Enhance Your Culinary Skills

Attending dashi classes offers more than just a cooking lesson; it’s an opportunity to enhance your culinary skills and deepen your understanding of Japanese cuisine. As you perfect the art of making dashi, you'll also learn about its various applications in dishes like miso soup, noodle soups, and sauces. Discussions often include tips on pairing dashi with other ingredients to create balanced and flavorful meals. Take-home recipes and resources are commonly provided, allowing you to recreate the magic of Japanese cooking in your own kitchen. Whether it's for personal enjoyment or professional development, these classes promise to enrich your culinary repertoire.
