The owner of this stylish, artisan soba noodle shop once ran a store in Manhattan before returning to take over the family business in 2007. The people of Tokyo welcomed back the prodigal son with open arms, and now his restaurant is one of the most renowned places to try high-quality soba in Tokyo.
All of the noodles are handmade from premium buckwheat flour. You can enjoy them either hot or cold, with a variety of different toppings and sides. Most people, however, go for the plainest noodles possible. True Japanese noodle enthusiasts are often strict purists, after all.
The noodles themselves have such a fantastic, subtle flavor that they make a great meal by themselves, but if you fancy adding a bit more variety you can choose from a range of tempura, and seasonal dishes which come and go throughout the year like pork belly, Kyoto vegetables, and fresh tuna.
The chef’s experience as a top soba chef in the States means his English is great, so don’t feel intimidated about striking up a conversation when you get the chance.
