Not bad, fair for the price, the sushi is good, and the service is good as well, but not really out of my expectations, so 4 stars. I paid approx 13k for this meal but not felt that full.

I am so pleased to write about my great experience at Sushi Ginza Onodera. While I am not usually a seafood person (shellfish and similar), I absolutely love fish. Being from Australia, I like Sushi but know that our "Maki Rolls" are not really comparable to the normal nigiri in Japan. With that in mind, I really wanted the full Omakase experience. That way I knew I was going to have a top quality sushi without the pressure or nerves of choosing my own. I booked the "Kaze" menu and loved every single bite. The staff were helpful and kind, making my experience perfect. Even the seafood I would usually shy away from was a tasteful experience. Concluding this review, I would definitely recommend this experience and booking through byFood, whose booking was very helpful and easy. I would also like to give an extra recommendation to their YouTube channel which really helped me plan my time in Japan (special mention to Shizuka Anderson).

We arrived at 5:55 and walked back and forth wondering if we had the right place. The kind noodle shop next door confirmed it. Then at exactly 6:00, the door opened and the Sushi Shin sign came out. Very Japan. Apparently five minutes early was our mistake. 😂 The omakase started with 5–8 appetizers before about 10 pieces of nigiri, so come hungry. The variety of seafood was impressive, from delicate sea bream and monkfish to sweet hairy crab and scallop. Then came two different types of toro, both beautifully rich and melt-in-your-mouth, and the uni was divine: creamy, sweet, briny perfection. Our family tried almost everything Chef offered except the gizzard. Even fish that normally aren’t the kids’ favorites, especially monkfish and sea bream, were prepared so well they happily ate them. No photos allowed, which made us concentrate on the food instead of documenting it. And after all those courses, we waited for the customary fruit dessert…which never came. 😂 Apparently the uni and toro were our dessert. Five stars. Trust the address, trust the chef, and don’t worry if the restaurant doesn’t appear to exist until exactly 6:00.

Discover Tokyo's Dashi Delicacies

Tokyo, a city where tradition meets innovation, is a gastronomic paradise offering culinary delights from around the world. For those who appreciate the subtle yet profound flavors of Japanese cuisine, dashi is an ingredient that cannot be overlooked. This flavorful stock forms the backbone of many classic dishes, providing a depth of flavor that is both rich and refined. Whether you are a seasoned dashi enthusiast or new to this culinary marvel, Tokyo's vibrant food scene offers an array of restaurants that specialize in dashi-infused dishes, promising an unforgettable dining experience.

Traditional and Modern Interpretations of Dashi in Tokyo

Dashi, traditionally made from ingredients such as kombu (kelp) and katsuobushi (dried bonito flakes), is a cornerstone of Japanese cooking. In Tokyo, you will find restaurants that honor these time-honored recipes while also pushing the boundaries with modern interpretations. Some establishments focus on traditional dishes like miso soup, udon, and soba, where dashi is the star ingredient, enhancing the umami flavors that make these dishes so comforting and satisfying. Meanwhile, contemporary chefs are incorporating dashi into innovative creations, blending it with international flavors and techniques to create unique fusion dishes. This fusion of old and new provides diners with a diverse range of options, ensuring that there is something for every palate.

A Journey Through Dashi's Varied Flavors

Exploring Tokyo's dashi restaurants is like embarking on a journey through Japan's culinary landscape. Each restaurant offers its own unique take on this essential stock, influenced by regional ingredients and personal creativity. Some chefs prefer a light and subtle dashi, allowing the natural flavors of the ingredients to shine, while others opt for a more robust and smoky version to make a bold statement. The nuances of dashi can differ significantly depending on the balance of its components, the length of brewing, and even the seasons. This variability allows for an exciting dining adventure, where each meal can provide a new and delightful experience.

If you are seeking an authentic taste of Japan or simply wish to delve deeper into the art of dashi flavoring, Tokyo is the ideal destination. With a plethora of restaurants offering both time-honored traditional dishes and inventive new creations, your culinary exploration of dashi will be both rewarding and delicious. As you savor the rich textures and complex flavors that dashi brings to the table, you’ll discover why this humble stock is revered by chefs and food enthusiasts alike.
