Kanazawa has a plethora of single-item restaurants like nowhere else in the country. Hiyoko is among the top few restaurants on that list, serving delicious cuts of wagyu. The only item on the menu is the wagyu steak with grilled vegetables, and it's been exactly that way since opening over 50 years ago.
With only eight counter seats in the restaurant, the wise take the time to reserve in advance to secure a spot. The master chef's skills as he meticulously grills the wagyu right before your eyes is a performance you don't want to miss.
The kuroge wagyu is what everyone talks about at Hiyoko. The exquisite cut of meat used — which a single cow serves only fourteen of— is aged in a special type of oil, causing the fatty parts to develop beautifully and soften the lean meat. The steak is actually so tender that there's no need for a knife — just cut it with chopsticks instead!
