Located in an old residential building in the industrial city of Nagoya is a Chinese restaurant which has been recognized for its expert adaptation of Sichuan flavors for Japanese palettes and ingredients.
Meido-cho Chugoku-sai Ishin is ran by the owner-chef Shinoda-san. Behind the counter he wears a jet-black, Chinese-style uniform with the logo of his restaurant proudly emblazoned on the breast in red and gold (the luckiest colors in Chinese culture).
Unusually for Chinese food, here the meal is served in kaiseki style, with a series of small dishes presented one after the other. Among them diners can enjoy luxuries such as Shanghai crab, as well as some home-style staples — such as fried rice — transformed into premium forms through the use of local ingredients and expert culinary techniques.
