This byFood Original, 2-hour class from the team behind Tokyo’s internationally acclaimed ramen shop, Tsuta.
This will take you through each component behind the restaurant’s signature fusion ramen dishes, which won the restaurant the Michelin Bib Gourmand award in 2015 and one Michelin star from 2016 to 2019.
First, you’ll hear an introduction to the story of Tsuta from your host, Yuka, the CEO of Japanese Soba Noodles Tsuta, who has a diverse background in fashion, hospitality, and technology. You’ll learn about Tsuta’s dedication to quality and the philosophy of its founder, Yuki Onishi, which is reflected in the attention to detail, including water filtration, bowl warming, and the selection of tableware, to this day.
Next, you'll get a behind-the-scenes tour of the kitchen before opening hours. Then, you’ll taste each component of Tsuta’s popular shoyu ramen. Featuring a light, sweet-savory soy sauce broth as its base and drawing inspiration from multicultural influences, this ramen incorporates hints of Japanese, Chinese, Italian, and French culinary principles. An option for shio (salt) ramen is also available.
Sample different types of homemade wheat noodles to discover the flavor and texture combinations that can elevate a bowl of ramen to culinary stardom. But because ramen isn't just the noodles, you'll also try the broth and a variety of seasoning sauces, and learn the proper method of adding toppings for maximum flavor and aesthetic appeal.
Finally, you'll enjoy a bowl of signature ramen using Tsuta’s recommended eating method. Take photos of your ramen and the bowl, which features Onishi’s signature at the bottom. Once finished, leave your mark on Tsuta’s history by writing a review and final thoughts in Tsuta’s guestbook, perhaps one of Tokyo's most coveted restaurant logs.
