Kotsubu is a little gem in Aomori, where it’s quite rare to find a vegan cafe. It might be difficult to dine here since the place is very popular amongst the locals and seats disappear fast when lunchtime comes, so a reservation is recommended.
From the outside, the cafe looks like a normal resident house, but once you step inside,
The drink section of Kotsubu is also worth taking a look at - with all drinks made from organic ingredients. Organic amazake - Japanese fermented rice drink, is one of their distinctive beverages, and you can enjoy it with soy milk or tea, or have it with your kinako latte.
You have two options for lunch: a one-plate set or fermented rice burgers, both served with soup. The lunch plate, however, is the highlight of the cafe, served with vegetable pate, chickpea hummus, tofu quiche, and different types of salad. You can choose rice or pita bread to go with it.
