The history of sushi, as told by master of the craft Jiro Ono, is far less formal than many present day sushiya would lead you to believe. At Ono-san’s Ginza shop, he strives to recapture the conversational and social atmosphere of the Edo-era sushi stalls at which the cuisine was pioneered.
He will advise you on all the proper procedures for eating sushi, from the need to eat the pieces as quickly as possible, to the correct procedure for picking them up. You’ll get plenty of chances to practice these skills over the course of his 20 dish omakase menu.
Fresh cuts of fish are served atop vinegared rice, prepared according to your arrival time for optimal flavor, then brushed with a thin glaze of soy sauce.
