This knife is forged from a special blend of metals for professional use of the highest caliber. A cobalt steel base is reinforced by molybdenum and vanadium for improved rust resistance and sanitation, plus chrome for excellent abrasion resistance. An 18-8 level stainless steel handle completes the slick all-metal appearance. This knife offers excellent defense against bacteria and rust and is verified to resist staining up to 180℃. Thanks to an ergonomic handle that's easy to grip and resistant to slippage, this knife is easy to wield and offers a great hand feel. The double-edged blade features a spine of 1.8mm and a length of 17 cm in Santoku style
